Ingredients

  • 1000 g of flour

  • 600g butter

  • 480g icing sugar

  • 180g ground almonds

  • 3 g salt

  • 300g potato starch

  • 34 g Yumgo WHOLE POWDER

  • 192 g of water (to hydrate the powder)

Process

  1. Mix all the dry ingredients together.

  2. Sand the powders with the butter.

  3. Mix Yumgo Whole powder with water.

  4. Add to the preparation and mix.

  5. Refrigerate before use.

  6. Blind cooking: Cook for 25 minutes at 160°C
