Dacquoise
Ingredients

300 g dark chocolate 68%

180 g of YUMGO White
-
60 g brown sugar
-
180 g vegetable milk
-
80 g coconut oil
Steps
-
Heat the vegetable milk. Just before it boils, mix the milk with the chocolate to melt it.

Add the coconut oil to the milk mixture then mix.

Cool the mixture until it is just warm.

Beat YUMGO Blanc until stiff, using the maximum speed of the mixer.

Incorporate the sugar gradually during the expansion of YUMGO then pour over the melted chocolate.

Mix gently with a spatula.

Pour into the containers.

Keep cool for 2 to 3 hours.
WAFFLES
Ingredients

180 g of whole milk or vegetable milk

43g butter or margarine
-
15g oil
-
25g sugar
-
5g vanilla
-
5 g WHOLE Yumgo POWDER+ 45 g of water (to hydrate the powder) or 50 g of Yumgo Whole LIQUID

5g of fresh yeast
-
2g salt
-
150 g T45 flour
Process
-
Heat milk to 55°C.

Melt butter and mix with oil.

For powder product, mix Yumgo Whole powder with water to rehydrate it.

Add the sugar, vanilla and ( rehydrated powder or liquid) Yumgo Whole to the butter/oil mixture.

Dissolve the fresh yeast in milk and add to the previous mixture.

Add salt and flour.
-
Refrigerate for 1 hour.

Cook in a waffle iron.
