VANILLA MOUSSELINE

Ingredients

  • 153 g milk or soy milk

  • 31 g of sugar

  • 12 g cornstarch

  • 86 g butter or margarine

  • 2 g of YUMGO Yolk Powder

  • 14 g of water (to hydrate the powder)

  • 2 rapeseed oil (to hydrate the powder)

Process

  1. Mix YUMGO Yolk Powder with water and rapeseed oil to rehydrate it.

  2. Cool down, the scraped vanilla pod, rehydrated YUMGO Yolk Powder, sugar and cornstarch and cook like a pastry cream.

  3. Cool quickly then smooth with a whisk and temper.

  4. Spread the butter or margarine until you obtain a homogeneous and well-whipped texture. Add the smoothed pastry cream in 2 times.

  5. Use immediately.
