SWISS MERINGUE

Ingredients

  • 500 g caster sugar

  • 223.75g water

  • 26.25 g of YUMGO White Powder

Process

  1. In a mixing bowl, whisk together the caster sugar and water.

  2. Heat in a bain-marie up to 50°.

  3. Pour everything into the mixer bowl.

  4. Add YUMGO White Powder.

  5. Mix 1 min at speed 1 then whip up with the mixer at maximum speed.

  6. Cook for 120 min at 100°C.
