CHOCOLATE MOUSSE

Ingredients

  • 35 g WHOLE Yumgo POWDER

  • 205g sugar

  • 105g T45 flour

  • 5g baking powder

  • 5g of  salt

  • 45g cornstarch

  • 180g water

  • 185g butter or margarine

  • 235g 68% chocolate

Process

  1. Mix the powders.

  2. Add water and mix.

  3. Melt the chocolate and the butter in a bain-marie at 55°C.

  4. Incorporate in the previous mixture.

  5. Pour the mixture into an 18cm cake mold (500g per mold) and bake for 15 to 20 minutes at 180°C.
