ITALIAN MERINGUE

Ingredients

  • 65 g Water 1

  • 200 g Sugar

  • 11 g Yumgo WHOLE POWDER + 90 g of Water 2 (to hydrate the powder) or 101 g of Yumgo Whole Liquid

Process

  1. Make a syrup with water 1 and sugar, then cook at 118°C.

  2. For powder product, put water 2 in the bowl of a standing mixer, add Yumgo White Powder, and mix.

  3. Whip the egg whites until foamy and pour in the syrup slowly..

  4. Continue whipping until it cools down.

  5. Use it immediately in the recipe of your choice
