INGREDIENTS
For 1 small cake 400 g
 
VANILLA DOUGH
  • Flour T45                           55gr

  • Semolina sugar                 55 gr

  • Baking powder                 4.5 gr

  • Almond powder               9.5 gr

  • Salt                                     1 gr

  • Potato starch                    20 gr

  • YUMGO White               62.5 gr

  • Plant based oil                 30 gr

  • Liquid vanilla                  2.5 gr

 

PREPARATION

Mix the dry ingredients: flour, baking powder, almond powder, potato starch and salt and sift.

Pour the preparation into the container containing the YUMGO White and the sugar then mix a little bit so as not to spice up the appliance.

Add the plant based oil and the liquid vanilla then mix using a whisk and finish using a spatula to obtain a homogeneous device.

 

CHOCOLATE DOUGH
  • Flour T45                         42.5 gr

  • Semolina sugar                  55 gr

  • Baking powder                  4.5 gr

  • Almond powder                9.5 gr

  • Salt                                      1 gr

  • Potato starch                     20 gr

  • YUMGO White                62.5 gr

  • Plant based oil                  30 gr

  • Liquid vanilla                   2.5 gr

  • Cocoa powder               12.5 gr

 

 
PREPARATION

Same technique, this time mix with the cocoa powder in addition, the flour, baking powder, almond powder, potato starch and salt, sift.

Pour the preparation into the container containing YUMGO White and the sugar.

Add plant based oil and liquid vanilla.

Mix with a whisk then finish with a spatula.

 
MOUNTING

Preheat oven 10 minutes at 180 degrees

  • Technique 1: Using the spatula, alternate in the mold a layer of vanilla device with a layer of chocolate device.

  • Technique 2: Alternate two layers of each device then mix using a fine utensil, to marble the interior.
