Yoshimi Landemaine presents his Melon Pan recipe, in 3 versions: Matcha, Raspberry and Vanilla.

BRIOCHE INGREDIENTS
  • Flour T45                   280 g

  • Cane sugar                  42 g

  • Coarse salt                    5 g

  • Fresh yeast                 5.6 g

  • YUMGO White             63 g

  • YUMGO Yolk                35 g

  • Soy milk                     112 g

  • Orange blossom           14 g

  • Fermented dough         84 g

  • Liquid vanilla                  5 g

  • Plant based butter      126 g

BRIOCHE STEPS
  1. Place all the dry ingredients in a bowl.

  2. Add all liquid ingredients and mix on speed 1 for 5 min. Then switch to speed 2 for 3 min.

  3. As soon as the dough is set, add the plant based butter and mix speed 1 for 5 min, then 3 min speed 2.

  4. 30 min after setting the dough, give a rabas and put in the refrigerator for 24 hours.

BISCUIT INGREDIENTS
Cookie dough base
  • Plant Based butter             100 g

  • Sugar                                  80 g

  • YUMGO Yolk                       40 g

  • YUMGO White                    20 g

  • Flour T45                          200 g

  • Baking powder                     6 g

  • Liquid vanilla                        4 g

Raspberry dough
  • Vanilla cookie dough           130 g

  • Raspberry jam                    21.6 g

  • Red coloring                       0.36 g

 

Matcha dough
  • Vanilla cookie dough             151 g

  • Matcha powder                      2.1 g

 

BISCUIT STEPS

 

  1. Put the butter and sugar in a bowl, whip with a whisk until the butter turns white.

  2. Mix YUMGO White and Yolk, add little by little to the butter mixture and mix.

  3. Add the flour and baking powder (previously sifted), mix.

  4. Add the vanilla.

  5. Divide the dough into 3, then mix each ingredient to have 3 kinds of cookies (vanilla, raspberry, matcha).

  6. The quantities correspond to 9 pieces including 3 of each taste.

Bake with the fan oven

165-170 degrees (depending on the oven)
